I have tried a great many video Apps but have found Filmic be the one that gives me most control over screen size (widescreen with bars if required), resolution (including 4K), and frame rate like this one. For sample footage see the Panda shots from my trip to Nogeyama Zoo in Yokohama.
iMotion - Recommended stop frame animation app

iMotion is my favourite stop-frame animation app. As with Filmic for video, I tried out all sorts of these apps. I can’t share the wonderful videos my students have made, but my kids love it too and you can see their movies in Japanese and English.
It’s $9.99 and but excellent value for money.
